Mediterranean Beef Pitas
A no-fuss, weeknight favorite in our house. Bright and fresh!
INGREDIENTS
1 lb Bravo Steaks lean ground beef or ground lamb
1 medium red bell pepper, chopped
2 heads romaine lettuce, chopped
⅓ cup crumbled herb-flavored feta cheese
⅓ cup bottled Italian dressing or homemade vinaigrette (below)
¼ cup Kalamata or ripe olives, chopped
½ cup chopped fresh parsley (optional)
4 pitas, toasted and halved
Italian Vinaigrette (optional):
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 tablespoon grated Parmesan
1 teaspoon dried parsley flakes
1 teaspoon garlic powder
½ teaspoon honey
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon black pepper
INSTRUCTIONS
Heat a skillet over medium-high heat. Add ground beef or lamb and chopped red pepper. Cook until meat is browned and fully cooked. Drain excess fat if needed.
If making the vinaigrette, whisk together all dressing ingredients in a small bowl.
In a large bowl, combine chopped romaine, feta, olives, parsley, and dressing.
Add the warm cooked meat and peppers to the bowl and toss gently to combine.
Lightly warm pitas in a skillet or toaster.
Open pita pockets and fill with the Mediterranean meat mixture. Serve immediately.
NOTES
Ground lamb gives a richer, more traditional Mediterranean flavor.
Add sliced cucumbers or tomatoes for extra freshness.
