Beef Nourish Bowls with Chipotle Crema
These hearty nourish bowls layer seasoned ground beef, roasted sweet potatoes, and fresh toppings over warm grains for an easy, balanced meal.
Finished with a smoky chipotle crema, they’re a great way to build a satisfying bowl with ingredients you likely already have on hand.
INGREDIENTS
Brown rice, prepared according to package directions
2 sweet potatoes, peeled and diced
1 lb Bravo Steaks lean ground beef
1 taco seasoning packet
2 tablespoons olive oil
Salt, to taste
Chili powder, to taste
Toppings (choose as desired):
Black beans
Sliced avocado
Roasted corn
Diced tomatoes
Chopped cilantro
Pickled red onions
Baby arugula
Lime wedges
Chipotle Crema:
¼ cup mayonnaise
1 cup plain Greek yogurt
2 chipotle peppers in adobo sauce
2 tablespoons lime juice
1 clove garlic
½ teaspoon salt
INSTRUCTIONS
Prepare the brown rice according to package directions.
Preheat oven to 400°F. Toss diced sweet potatoes with olive oil, salt, and chili powder. Spread on a baking sheet and roast for 20–30 minutes until tender.
In a skillet over medium heat, cook the ground beef until no pink remains. Add taco seasoning and prepare according to package directions.
Make the chipotle crema by blending mayonnaise, Greek yogurt, chipotle peppers, lime juice, garlic, and salt until smooth.
Build bowls with a base of rice, then add ground beef, roasted sweet potatoes, and desired toppings.
Drizzle with chipotle crema and serve with lime wedges.
NOTES
Components can be prepped ahead and assembled throughout the week.
Swap rice for quinoa or farro if preferred.
Ground lamb or a beef-lamb mix also works well here.
Store crema in the fridge up to 4 days.
