Beef Taco Salad
A fresh, build-your-own meal that works for weeknights, gatherings, or easy lunches.
INGREDIENTS
1 lb Bravo Steaks ground beef
1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
6–8 cups spring greens or chopped romaine
Toppings:
1–2 avocados, sliced
1 cup black beans, drained and rinsed
1 cup diced tomatoes or fresh pico de gallo
1 cup corn (fresh, canned, or roasted)
1 cup crushed tortilla chips
¼ cup chopped fresh cilantro
Optional: shredded cheddar, pickled onions, lime wedges
Cilantro Lime Ranch:
½ cup mayonnaise
½ cup plain Greek yogurt or sour cream
1 tablespoon ranch seasoning
Juice of 1 lime
¼ cup fresh cilantro
1 clove garlic
Splash of milk to thin (if needed)
Salt and pepper to taste
INSTRUCTIONS
In a skillet over medium-high heat, cook Bravo Steaks ground beef until fully browned. Drain excess fat if needed.
Stir in taco seasoning and a splash of water according to packet directions. Simmer briefly until coated and flavorful.
Blend all cilantro lime ranch ingredients until smooth. Adjust thickness with a little milk if needed.
Arrange greens in a large bowl or platter.
Top with warm seasoned beef, black beans, tomatoes or pico, corn, avocado, tortilla chips, and cilantro.
Drizzle with cilantro lime ranch and serve with lime wedges.
NOTES
Fresh pico de gallo adds the best flavor, but diced tomatoes work well too.
Serve as individual bowls or build a large family-style salad.
